新茶与陈茶之鉴别

首先，可以根据茶叶的色泽分辨陈茶与新茶。
绿茶色泽青翠碧绿，汤色黄绿明亮；是新茶的标志。茶在贮藏过程中，由于构成茶叶色泽的一些物质，会在光、气、热的作用下，发生缓慢分解或氧化，绿茶中的叶绿素分解、氧化，会使绿茶色泽变得枯灰无光，而茶褐素的增加，则会使绿茶汤色变得黄褐不清，失去了原有的新鲜色泽。
其次，可从香气上分辨新茶与陈茶。
科学分析表明，构成茶叶香气的成分有300多种，主要是醇类、酯类、醛类等物质。它们在茶叶贮藏过程中，既能不断挥发，又会缓慢氧化。因此，随着时间的延长，茶叶的香气就会由高变低，香型就会由新茶时的清香馥郁而变得低闷混浊。
从茶叶的滋味去分辨新茶与陈茶。
因为在贮藏过程中，茶叶中的酚类化合物、氨基酸、维生素等构成滋味的物质，有的分解挥发，有的缩合成不溶于水的物质，从而使可溶于茶汤中的有效滋味物质减少。因此，不管何种茶类，大凡新茶的滋味都醇厚鲜爽，而陈茶却显得淡而不爽。
